Pretzels

Ingredients

  • 350ml warm water
  • 7g yeast
  • 5g salt
  • 12g brown sugar or granulated sugar
  • 12g melted butter
  • 500g all-purpose flour (70% hydration)

Methodology

  1. Combine ingredients.

  2. Knead dough.

  3. Proof dough 2 hours.

  4. Shape dough into pretzels or 30g balls.

  5. Boil in a baking soda path, 20 seconds per side.

  6. Add a butter or egg wash. Sprinkle flakey salt over top.

  7. Bake in a 400 degree oven for 15 minutes.
