Pretzels
Ingredients
- 350ml warm water
- 7g yeast
- 5g salt
- 12g brown sugar or granulated sugar
- 12g melted butter
- 500g all-purpose flour (70% hydration)
Methodology
Combine ingredients.
Knead dough.
Proof dough 2 hours.
Shape dough into pretzels or 30g balls.
Boil in a baking soda path, 20 seconds per side.
Add a butter or egg wash. Sprinkle flakey salt over top.
Bake in a 400 degree oven for 15 minutes.
