Ingredients

Fried Pork Cutlets

  • 2 boneless pork chops 3/4" / 2cm thick
  • Salt
  • 50g plain flour
  • 25g cornstarch
  • 2 eggs, beaten
  • 50g panako bread crumbs
  • Peanut oil (or vegetable) for frying

Methodology

  1. Pound pork to 3/4" / 2cm thick, sprinkle with salt.

  2. Heat 2" / 5cm of oil in wok to 350°F / 175°C.

  3. Bread cutlets by coating in flour-cornstarch mixture, then beaten eggs, then bread crumbs.

  4. Gently drop prok into oil an dcook for 7 to 9 minutes.

  5. Remove pork from oil, place on paper towel on a wire rack. Sprinkle with salt.

  6. Slice cutlets and serve.
