Ingredients
Fried Pork Cutlets
- 2 boneless pork chops 3/4" / 2cm thick
- Salt
- 50g plain flour
- 25g cornstarch
- 2 eggs, beaten
- 50g panako bread crumbs
- Peanut oil (or vegetable) for frying
Methodology
Pound pork to 3/4" / 2cm thick, sprinkle with salt.
Heat 2" / 5cm of oil in wok to 350°F / 175°C.
Bread cutlets by coating in flour-cornstarch mixture, then beaten eggs, then bread crumbs.
Gently drop prok into oil an dcook for 7 to 9 minutes.
Remove pork from oil, place on paper towel on a wire rack. Sprinkle with salt.
Slice cutlets and serve.
